2 8-oz containers Simple Root Strawberry Cream Cheese
11/2 cups vegan heavy whipping cream
1/4 cup lemon juice
1/2 cup water
3/4 cup sugar, divided
1 cup sliced strawberries, about 10 medium
1 cup raspberries
In a small saucepan combine the water and 1/2 cup of sugar. Bring to a simmer over medium heat until the sugar has dissolved. Remove from the heat and stir in the lemon juice.
In the bowl of a stand mixer or using a handheld mixer, whip the heavy whipping cream on medium speed until stiff peaks form. Remove the cream from the bowl and set it aside. Place the cream cheese and remaining 1/4 cup sugar in the mixer and cream on medium speed until smooth. Using a spatula fold in the reserved whipped cream.
To assemble the tiramisu, dip each ladyfinger into the lemon sugar-water mixture and arrange one layer of ladyfingers on the bottom of the 9x9 dish. Spread half of the cream cheese mixture over the ladyfingers and top with half of the berries. Repeat for an additional layer finishing with the berries.
Refrigerate for at least 4 hours before serving.
