2 large sweet potatoes, baked
4 tbs Simple Root Salsa Con Queso
1 tbs olive oil or vegetable oil
1 15.5 oz can black beans, drained and rinsed
1 teaspoon taco seasoning
1/2 cup water
1/2 medium white onion, diced
2 tbs roasted red bell pepper, diced
1 tbsp cilantro leaves, chopped
2 tbs tri-colored tortilla strips
In a medium sauté pan, cook the onions with 1 tablespoon of oil over medium heat until the onions become slightly translucent. Add the taco seasoning, black beans, and water, and bring to simmer. Cook for 2-3 minutes or until heated through.
In a microwave-safe bowl, heat the queso on medium heat for 45-60 seconds, stirring halfway through.
Cut the sweet potatoes in half lengthwise and top each potato with half the black beans, roasted red bell pepper, salsa con queso, cilantro, and tortilla strips. Serve immediately.
bake an additional 10 minutes. Serve with the green onions sprinkled on top
