Ingredients

1 sweet potato cut into 1-inch pieces

1 large onion cut into 1-inch pieces

3 carrots, peeled and cut into 1-inch pieces

2 parsnips peeled and cut into 1-inch pieces

3 tbs olive oil

1/2 tsp ground cumin

1/2 tsp chili powder

1/2 tsp salt

3 garlic cloves, minced

1/2 cup Simple Root Sweet Spicy Mango Sweet Potato Dip

Instructions

Preheat the oven to 425 F Degrees

Step 1

In a large bowl combine the cumin, chili powder, salt, olive oil, and garlic. Add the vegetable to the bowl and mix to evenly coat the vegetables with the oil spice mixture.

 

Step 2 

Spread the vegetables on a large baking sheet or roasting pan and bake for 35-40 minutes or until the vegetables are cooked through and slightly caramelized.
