13 cups of frosting
24 oz Simple Root Cream Cheese, at room temperature
12oz vegan butter, at room temperature
5 lbs. powdered sugar
1 tbs vanilla extract
Blend the butter and cream cheese in the bowl of a stand mixer with the paddle attachment on low speed until thoroughly combined. Add the vanilla extract and mix for an additional minute.
Add the powdered sugar in half-pound increments and beat until smooth until all of the sugar has been incorporated. Use as a frosting for your favorite cake, cookie, or cupcake recipe.
